Cultures the world over have been using onions from ancient times for various purposes, mostly for cooking and for medicinal purposes. Onions come under the bulb lily family and come in a variety of colors like red, white yellow and green. Each variety has its own characteristics of flavor and taste with pungent and bland tastes.

Onions are cultivated all over Europe, North America and they find roots in Central Asia. They have been widely used as spices, vegetables and medicine and over six hundred species exist and botanically relate to garlic, shallots and leeks.

Onions are eaten raw and are used for cooking a wide range of dishes to add taste and flavor in both vegetarian and non vegetarian fares. They are used for dressings, in salads, sandwiches, roasted, fried and garnished.

Onions are characterized by their sulfur compounds which possess antimicrobial properties and anti bacterial properties that combat diseases like E coli and Bacillus.

Onions have been used effectively in treatment of bacterial infection, asthma, coughs and colds and breathing problems. Onions help to decrease bronchial spasms and onion extracts were found to improve bronchial constriction in the asthma patients. Onions have been used for diseases of the colon and suppress the growth of tumors.

Onions are effective in improving blood cholesterol, blood pressure and blood flow thereby reducing the risks of heart attacks and heart diseases as they contain a number of sulfides similar to the properties of garlic. Onion extracts provide protection against tumor growth and cancer of the stomach as they possess sulfides and antioxidants. Onions with strong flavor have more health giving properties compared to the milder varieties of onions.

India is a major exporter of fresh onions and also dehydrated onions to various global markets. The demand for onions has been increasing every year for use in the food industry and the health care industry across the globe. As fresh onions need more storage area and having a limited life span, the processed products such as onion flakes, sliced, kibbled onions and preserved products find more volume in exports.

The original taste and flavor are retained and the cost factor is also lesser compared to the fresh onions. Dehydrated onions find application in the bakery industry and in the cosmetics industry apart from being used in the culinary segments like hotels and homes. Indian homes use this spice in their traditional cooking on all occasions.
